The correct size for the Pinarello Prince racing bike, in my opinion is the CC515, which is basically perfect for you.
Then he can adjust the riding position with a shorter or longer stem.
He could also take the next smallest size, but it would be just small, suitable if you want a short frame and a relaxed riding position.
Ultimately I would buy the CC515 and then arrange everything according to my needs.
This frame also has almost the same geometry as its current road bike.
Its alternative frame, the new Colnago V4RS, is the 485 size, as per the Colnago catalogue, also completely similar to Pinarello and its current racing bike.
So either frame is fine for her, both bikes are great.
